I am currently living in UK naja and have been to Spain last summer. I think Spain definitely has better weather and food ( which I've longed for).
From you list, you haven't been to any Mediterranean countries apart from Italy so it might be good idea to explore this area.
However, this is your trip so it will depend what kind of things you would like to see.
UK: Museums, castle, architecture are good. For 7-8 days, you can travel around London and perhaps Oxford, Strafford upon Avon, Cotswold then head to the South West like Bath or even Cornwall. It is also possible to go to Scotland but the weather is not too good in April so you might be disappointed with Highland. However, Edinburgh and Stirling are very nice (personally I prefer Stirling castle to Edinburgh).
About Spain, I strongly recommended you to choose the region that you are interested in and explore the area as Northern of Spain and Southern of Spain are very different.
I have been to the South of Spain, if you like the combination of Moorish and Christianity arts, you will love this area.
