Hi, I'm Chef Kara Mickelson, owner of Creative Culinary Group. I'm here today with About.com and we're gonna show you how to make Baklava. Ingredients for Baklava
The ingredients for Baklava are: about ¾ cup of pistachio nuts, finely chopped ¼ cup of blanched almonds, those are also finely chopped 2 tablespoons of olive oil ¼ cup of butter about 2 tablespoons of cinnamon and also ¼ teaspoon of cloves, mixed together ¼ cup of sugar ¼ cup of orange blossom flavored honey and then 1 package of frozen filo dough let that defrost in the refrigerator for about 24 hours. You're gonna keep that wrapped up and you're gonna have it covered with a wet towel and a towel on top while we're getting prepped Instructions for Making Baklava
So the first step is we're gonna make the filling for the Baklava. We're gonna use about ¾ cup of the chopped pistachios. We're gonna mix that with about ¼ cup of the blanched almonds, and then we're gonna use some of our spice mixture, which is some of the cinnamon and the clove. So we're gonna mix that together, we're gonna add about ¼ cup of butter and then you're gonna mix that -and that will hold that ingredient together. Now with filo dough, you're gonna have to work quickly. You should keep it covered at all times. We're gonna do about 6 layers, and each layer is going to be laid into the pan, and then brushed with a combination of butter and olive oil. We're just gonna brush that oil combination on each sheet, and layer it to about 6 layers. More Instructions for Making Baklava
So now our next step is we're gonna take that filling that we made before with the pistachio and almond mix, and create a nice even layer. We're gonna start with our sheet of dough again and what I like to do is to go in and just lightly dab, weighting down the border, and that will help you when you're trying to spread the rest of the butter and the oil combination onto the filo, without pulling it up. Brush the mixture on top, another layer, repeating the same process six sheets. Now we're ready for our next layer of nuts. Now we're gonna go ahead and layer again, another 6 sheets, with our filo. So now that we've finished our top layer of pastry, we're gonna go ahead and we're gonna score it. We're gonna create diamond shapes and you can use a serrated knife for that but I also like to use a razor because it's a little bit sharper. And you're just gonna go ahead and go down about ¼ of an inch. And once you do this and you bake it, you won't have to worry about it crumbling to pieces after you've created that hard crust from baking. Cooking the Baklava
Now this is gonna go in a pre-heated 350 degree oven, and it will be in there approximately 50 minutes. Now we're gonna make our syrup on top of the Baklava. That's about ¼ cup of sugar, ¼ cup of honey, and a little pinch of our cinnamon and clove mixture. And we're just gonna bring that to a boil and reduce it down to a simmer, and let it rest so it cools down before we pour it over the top of the Baklava. So now our Baklava has come out of the oven, and it's been cooling for about an hour, and we're gonna add our room temperature syrup over the top to create a nice glaze. And then once that rests for a while, we're gonna go ahead and cut the final Baklava with a knife into those final diamond shapes. So here's our finished Baklava, ready to serve, and I know we thought this was going to be complicated but it was just super easy, and look at this fabulous presentation.
