Espresso (Short Black) A single dosse(7 grams) of ground coffee in a single group handle with a small filter basket. 4-5 sec pre-infusion followed by a 20-25 sec extraction resulting in a 30 ml shot of coffee liquor with a golden cre`ma on top. Served in a heated conical demitasse cup or shot/piccolo glass with sugar.
Doppio Espresso (Double) A double dose (14grams) of ground coffee in a double group handle with a large filter basket. 4-5 second pre-infusion followed by a 20-25 sec extraction resulting in a 60 ml shot of coffee liquor with a gloden cre`ma on top. Served as same as Espresso
Cafe Lungo (Long Black or Americano) a double dose (14 grams) of ground coffee in a double group handle with a large filter basket. 4-5 sec pre-infusion followed by a 20-25 sec extraction resulting in a 60 ml shot of coffee liquor floated on top of half a cup of hot water with golden cre`ma on top. Served in a heated cappuccino cup with sugar.
Cappuccino - Name after the cappuccin monks of Italy, who were know for their paticular hairstyle. The cappucin monks would have only the tops of their heads shaved and would leave a ring of hair around the base of their heads. The cappuccino, when made correctly, would produce a ring of brown (from the coffee cre`ma) around the outside of the cup and a white centre (from the foamed milk, poured to produce a dome effect to signify the dome shape of the monk's head).
Cappuccino a shot of Espresso with a golden cre`ma on top. Topped with equal amounts of foam and textured mild to form a dome shape. (Never use a spoon to make to dome) Then topped with a shake of chocolate powder or nutmag or cinnamon (I like cinnamon) Serve in a heated large espresso cup with sugar.
Cafe' latte A single shot of Espresso with a golden cre`ma on top. Topped with tow thirds textured mild and 5-10 mm of foam. Served in heated 120 ml 'latte' glass with sugar.
Flat white Exactly same Cafe' latte but Flat white serve in a heated large espresso cup with sugar.
Macchiato (my flavour) A shot of Espresso. Add a teaspooon ( a dash) of textured milk (don't use a spoon please) into the centre of the cre`ma to form a large round white dot. Serve in a heated conical demitasse cup or shot/piccolo glass with sugar.
Vienna coffee A double Espresso floated on top of half a cup of hot water with a golden cre`ma on top. Topped with stiffened cream and dusted with chocolate powder(or nutmeg). Serve in a haeated large espresso cup with sugar.
