Ingredients:
4 tablespoons Tillamook® Butter, divided 1/4 cup grated Parmesan cheese 1/4 cup flour 1 cup milk, heated 1 cup (4 ounces) Tillamook® Sharp Cheddar Cheese, shredded 1/4 teaspoon nutmeg 3 large eggs, separate yolks from whites
Instructions:
Heat oven to 350º. Using 1 tablespoon butter, coat bottom and sides of four 8-ounce ramekins. Sprinkle each ramekin with 1 tablespoon Parmesan.
In medium saucepan, melt 3 tablespoons butter over medium heat. Add flour and stir constantly for about 4 minutes until butter has a nutty aroma being careful not to let it brown. Slowly add milk, stirring for about 3-4 minutes until mixture has thickened. Stir in the cheese and nutmeg. Remove from heat, let cool slightly, about 10 minutes, then whisk in egg yolks.
In medium bowl beat egg whites to form stiff peaks. Gently fold whites into the cheese mixture.
Spoon soufflé mixture into prepared ramekins. Place ramekins in 10-in square baking pan, set on middle oven rack and pour boiling water into the pan, about 2/3 up the sides of the ramekins. Bake in oven for about 20 minutes until soufflés have risen, egg appears set and tops are golden brown. Remove from oven and allow to cool. The tops will collapse. Soufflés can be set aside for an hour until ready to serve*.
To serve: Heat oven to 425º. Prepare Deviled Crab Sauce. Place soufflés on baking sheet and bake for 8-10 minutes until puffed. Serve immediately with Deviled Crab Sauce.
*To make a day ahead: Let soufflés cool then cover and refrigerate overnight. Remove from refrigerator 1/2 hour before reheating.
Deviled Crab Sauce
2 tablespoons minced shallots 1 tablespoon minced celery 1 tablespoon Tillamook ® Butter 1 tablespoon flour 1 1/4 cup whole milk 1 1/2 teaspoon Dijon mustard 1/4 teaspoon Tabasco sauce 1 tablespoon chopped chives 4 ounces fresh crab meat pinch black pepper salt to taste
In small saucepan, sauté shallots and celery in butter until tender. Add flour and stir over low heat 1-2 minutes. Stir in milk, mustard, Tabasco, salt and pepper and simmer about 10 minutes, stirring constantly, until smooth. Gently stir in chives, crab, pepper and salt to taste. Cover and keep warm until ready to use
