How to Melt Chocolate Chips
Put a pan of water on the stove to heat. The pan should be filled about half way. Choose a glass bowl that will sit right on top of and also slightly inside the pan, but make sure that the water does not touch the bottom of the bowl.
Turn the heat to medium/medium low to bring the water to a simmer. You DO NOT want a hard boil. This will scorch your chocolate.
Pour your chocolate chips or chocolate wafers into the bowl.
Ocassionally and gently stir the chocolate with a spoon until they are melted. The chocolate chips will begin to soften and melt over the hot water.
You want to keep a close eye on the melting point of chocolate as keeping the melted chocolate chips or wafers over the heat for too long will scorch your chocolate which does not taste or look good; scorched chocolate is also difficult to work with. You will know when your chocolate is scorching when it starts to look grainy, clumpy, and dull. Melted chocolate should be shiny and smooth. Even when melting white chocolate chips, the chocolate can scorch.
When the chocolate has melted, turn off or down your heat to the lowest temperature. If you are melting chocolate for strawberries and have a lot of fruit to dip, you may want to keep the heat on low to keep the chocolate melted. However, keep a very close eye on the scorching. You can turn it off and back on as needed.
Melting Chocolate Chips in the Microwave
Using a microwave to melt chocolate chips is not ideal but can be done. The danger with using a microwave is that the likely hood of scorching your chocolate is much higher. If you absolutely have to then put the chocolate chips in a glass bowl and start with low increments of time such as 30 seconds. Every 30 seconds take the bowl from the microwave and stir with a spoon. Even though the chips still look to be in their whole form, they may be melted. Stirring with spoon will be a good test to see if they have melted or not.
