Ohhhhhh nice topic...... Let me jam please.......
Tuna I love all of them, especially O toro, of course from a blue fin, which is so damn expensive... Somehow, many restaurants use chutoro, but say that it is O toro. I think this is quite bad for us, consumer..... Maguro, sweet and clean taste. Good maguro is totally different from what the buffet sushi restaurants serve us. Much finer.........
Horse meat. My next favorite might be a horse meat, which, surprisingly, is similar to O toro. Even more fatty taste!!!!!! However, I feel a bit guilty everytime I order this. They are such fine animals......
Hamachi is pretty good. Especially in winter time. or a meat of its baby, whose texture is very fine.....
Sake, salmon. Interesting, that original Edomae sushi doesn't have raw salmon in its sushi menu. Only the smoke one. So, for me, salmon is a so-so menu.....
Uni.. Oh.....that yummy yellow paste...... The best quality is from japan sea. The second best, i heard, is from the US. Everytime I went to the south, I wonder whether we can eat thai ones?????
EEL Anago. Not common is most sushi place. Anago, or sea eel, got a bit nutty taste, which is pretty nice... Unagi, fresh water one. This is a more common version. Lovely when grilled......Yummmm...
Hotatae Scallop....Sweet and juicy. Among all raw meat, I will rank this at the very top......
