I somewhat agree with Khun กริชนาคราช.
Another thing I'd like to add here is that you should also know what the OWNER's policies are. Believe you me, it makes a HUGE difference. Some of them are happy to pay you in cash and don't withhold taxes. Filing your income, then, is your sole responsibility. So you'll get more money (I assume you'll report less than what you've earned). However, others, if they don't want to take risks messing with the IRS, may choose to do it the right way. In that case, you're going to have to pay tax correctly, which can be a significant amount of money.
Anyways, I'm not just talking about the money here. Khun ศรีธนา touched on something else that you may not worry about it now but it could make you quit or stay. Be it the owner's sanity (or insanity?), locations, customers, side jobs, schedules, co-workers, etc. The whole nine.
If you've never worked as a server before, I guess you'll just have to try it for yourself. It's quite hard to answer your questions. Though I'm sure about one thing, working as a servers can drain you physically (if not also mentally).
