Tax year starts in April, when and if your earning starts to go above the allowance then you will be taxed and the calculation of tax deduction based on per annum is applied. So if you leave your job before the year ends whatever is overpaid as tax will be refunded to you, no doubt about that.
You must contact your local Tax Office as soon as you have all necessary documents from your employer then fill in the claim form sent by the tax office (or use online form where applicable) and within one week (normally) your case will be processed. You should get a cheque paid to your nominated account around 2-3 months after you've made the claim (no guarantee, mine was done over 10 years ago when I left UK)
For example: straight calculation for a single person with no other allowances. See attached picture also.
Your weekly earning is 200 pounds (fixed) per week, you leave your job 25 weeks after tax year starts (6 April)
Your tax deduction has already been calculated and taken for a full 12 months (52 weeks) period based on your projected income of 10,400 pound . After 25 weeks your actual earning would obviously be lower.
Let say, during 25 weeks (easy number), your earning comes to 5000 pounds
Income 5000 pounds (A) Tax paid 19.1 x 25 =477.5 pounds (B)
personal allowance 5435 pounds (C)
Income tax is chargeable on this amount (A- C)= -435 = no chargeable income
Tax on 0 pounds
Lower rate at x percent Basic rate at y percent
(D) Tax chargeable= 0
Any other allowance?
(E) Less total adjustments (F) Tax payable (D minus E )= 0
Repayment of Tax (B minus F) 477.5-0 = 477.5
You should be getting a refund of 477.5 pounds*
Just remember that whatever you earn above the personal allowance will be taxed and that amount can't be claimed back.
Hope you get a picture.
**corrected some errors**
Best wishes.
