In this case you have to believe your husband.
If and when you get a visa (Dutch or otherwise) you can safely enter any country in the Schengen. It is not really a good practice to apply for a visa for a country then not using it to enter that country but if it can't be helped then so be it.
Better to have one than none.
I hope you are applying for an EU family (as a spouse of EU national) visa, then that should not be any problem at all as your husband is travelling with you.

Once arrive in Spain you must apply for NIE and residential card (residencia in Spanish) as soon as you possibly can at a national police station nearest to where you live, the process of getting a residential card for foreigners (non-EU) can take up to 18 months. With this card you can travel through out the Schengen zone.
