Every worker who works legally must have an NI number, even a student.

Can you explain how you come to this conclusion? Do you get a salary pay slip every month?
Without a NI number you cannot be working legally. You should point this out to your employer for your own benefit, but you may lose this job.
If your employer is genuine you should get a pay slip explaining what have been deducted from your wages.
I know a little bit about how much income tax should be deducted from your earning each month, but I do need to know how much your actual earning is per month. To be deducted 200-300 GBP from your earning, your gross earning must be around 1,000 to just under 1,400 GBP per month. Which means that you have to be working between 220-300 hours per month. Far too many hours for a student during term time, you are in fact breaking the immigration law if you have been doing this. No wonder why your employer deducted you that much money off your wages.

Example; for net earning; tax and NI deduction
For 4.5 GBP/hr: 20 hrs/week = 90 GBP/week, since you are not over the allowance of 91.25 GBP per week there's nothing to be deducted, so your net income is exactly 90 GBP.
For 4.5 GBP/hr: 55 hrs/week= 247.5 GBP,
Gross= 247.5/week, 1072.50/month Tax allowance= 91.25/week, 395.42/month Total Taxable= 156.25/week, 677.08/month Tax paid= 29.71/week, 128.76/month NI= 17.22/week, 74.60/month
Deducted= 46.93/week, 203.36/month
Net wages= 200.57/week, 869.14/month
So if you have been working as much as what I said you have, then you have been correctly paid by your employer.
